BEST CORNBREAD IN THE UNIVERSE
1 C White or Yellow Cornmeal
1 can Creamed Corn
1 cup (8oz package) Sour Cream or Plain Yogurt
(lowfat sour cream works quite well)
2 Eggs
2 t Baking Powder
1 1⁄2 t Salt
1⁄4 C Corn Oil (or other cooking oil)
Make this recipe in a deep dish glass pie pan or a square glass cake dish. Pour the 1/4 cup oil into the glass baking dish; turn oven to 375° and put dish in oven. Oil will be heating while you are mixing the rest of the recipe.
In a medium bowl, combine remaining ingredients until just blended. Pour batter into the hot oil in the glass pan. Bake approx. 30-45 min. or until golden brown. Cut and serve immediately. Makes 12 wedges of cornbread.

Millionaire Pie
1 can Eagle Brand milk
1/4 c. lemon juice
1 lg. can crushed pineapple, drained
1 c. pecans
8 oz. Cool Whip
2 graham cracker crusts
Stir milk and lemon juice together with a spoon until thick. Mix with pineapple, pecans and Cool Whip. Pile into the graham cracker crusts. Chill for 2 hours. This will keep for days.
I ALWAYS leave out the nuts, as I think they are just too much. Cool Whip does not come in 8 oz. packages in my area. It is OK to use the 12 oz. package...works just fine.
Additionally, this will make one pie in a deep dish pie plate. Follow the directions on your graham cracker crumb box for the crust recipe.
I have found that using fresh squeezed lemon juice makes the pie taste fresher and more lemony (duh), however, there is NOTHNG wrong with the bottled stuff. The pie is very tasty. It is also very easy to make ahead and perfect for taking to a pot luck.

Jen’s Cheesecake
3/4 Cup Graham Cracker Crumbs
2 Tablespoons Melted Butter
2 Tablespoons Sugar
1 1/2 lbs. Cream Cheese (3 pkgs.)
1 Cup Sugar
3 Eggs
1 teaspoon Vanilla
2 Cups Sour Cream (16 oz.)
3 Tablespoons Sugar
1/4 teaspoon Cinnamon
1 teaspoon Vanilla
1 Can Fruit Pie Filling Chilled (optional)
Preheat Oven to 350ºF.
Use 9” or 10” Spring Pan.
Combine Graham Cracker Crumbs, Melted Butter and Sugar in pan to line bottom of pan.
Cream the Cream Cheese, Sugar, Eggs and Vanilla. Pour into spring pan and bake 30 minutes or until set.
Remove from oven and reset to 425ºF and return pan to oven for 10 minutes, then remove.
Mix Sour Cream, Sugar, Cinnamon and Vanilla. Spread mixture on top of cake.
Return to oven for 5 minutes.
Let Cool and Refrigerate.
Top with Canned Fruit of choice if desired.
